This harvest chicken bowl is balanced, comforting, and easy to come back to throughout the week. It’s packed with simple, nourishing ingredients, super filling, and makes for a great meal prep recipe to keep in your rotation.
The overnight marinade gives the chicken so much flavor while still keeping it tender and juicy. Paired with the warm rice, sweet potatoes, fresh greens, and avocado, this bowl feels especially balanced and satisfying.
Ingredients
For the Chicken
- 3 chicken breasts (thinly sliced)
- Juice of 1 small lime
- 1 tsp vinegar
- Steak seasoning, to taste
- Paprika, to taste
- Black pepper, to taste
- Cumin powder, to taste
- 1 inch fresh ginger (or ginger powder)
- 5 garlic cloves
- Pinch of cinnamon powder (about ¼ tsp)
- 1 tbsp olive oil
- 1 tbsp ketchup
- 1 tbsp yogurt
- ½ tsp oregano
- Olive oil
- Butter
For the Bowl
- Jasmine rice
- Leafy greens
- Sweet potatoes
- Avocado, sliced
- Sauce of choice (I used Chick-fil-A sauce)
Instructions
- After washing the chicken with your method of choice, slice the chicken breasts horizontally so they become thinner cutlets, or use pre-thinly sliced chicken breasts.
- In a bowl, combine the lime juice, vinegar, steak seasoning, paprika, black pepper, cumin, ginger, garlic, cinnamon, olive oil, ketchup, yogurt, and oregano. Mix well, then add the chicken and coat evenly.
- Cover and marinate overnight for the best flavor.
- Heat a drizzle of olive oil in a pan over medium heat and allow it to get hot before adding the chicken.
- Place the chicken into the pan one at a time, making sure to lay the chicken flat on the pan. If your pan is not large enough, cook the chicken in two rounds.
- Let the chicken cook untouched for about 4 minutes on the first side so it can develop a nice golden sear.
- Flip and cook for another 4 minutes on the other side.
- During the last minute of cooking, add a bit of butter to the pan and baste the chicken breasts for extra flavor and richness.
- To plate, start with a base of warm jasmine rice and leafy greens, then layer on the grilled chicken, sliced avocado, and sweet potatoes.
- Finish with a drizzle of your favorite sauce (I used Chick-fil-A sauce).
