Golden, flavorful tofu tossed in a sweet-savory stir-fry sauce with fresh veggies, then layered over garlicky noodles. This dish is perfect when you want a quick, balanced dinner packed with flavor and plant-based protein.

This recipe is also flexible, you can swap in your favorite veggies, noodles, or rice, and adjust the sauce to your taste.

Ingredients

For the Tofu:

  • 1 packet firm or extra-firm tofu
  • 3 tbsp cornstarch
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1–2 tbsp olive oil or vegetable oil (for frying)

For the Stir-Fry Sauce:

  • 2 tbsp oil
  • 1 tbsp ginger powder
  • 1 tbsp freshly minced garlic
  • ½ cup white and green onion, chopped
  • ½ cup red onion, cut into large cubes
  • ½ cup broccoli florets
  • 1 cup bell peppers, sliced
  • 2 tbsp ketchup
  • 2 tbsp light soy sauce
  • 1 tsp white vinegar
  • 2 tbsp honey
  • ½ tsp salt (or to taste)

For the Noodles:

  • Pasta or noodles of choice, cooked according to package instructions
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tbsp soy sauce
  • Sesame seeds, to garnish (optional)

Instructions

Tofu

  1. Thoroughly pat and gently press the tofu with paper towels to remove excess moisture, then cut into 1-inch cubes.
  2. In a bowl, toss the tofu with cornstarch, black pepper, and salt until evenly coated.
  3. Heat oil in a nonstick skillet over medium-high heat. Arrange the tofu pieces in a single layer and cook until golden on all sides, flipping halfway through (about 5 minutes total).
  4. Remove from the pan and set aside.

Stir-Fry Sauce

  1. In a clean pan, heat 2 tbsp oil. Add the ginger powder and minced garlic; sauté for about 30 seconds until fragrant.
  2. Stir in the onions, broccoli, and bell peppers. Mix for another 30 seconds, just until slightly softened but still crisp.
  3. Add ketchup, soy sauce, vinegar, honey, and salt. Stir to combine for another 30 seconds, then return the tofu to the pan and toss gently until everything is coated in the sauce.

Noodles/Pasta

  1. Cook a full box of noodles (or pasta) according to package instructions. Drain well.
  2. In a separate pan, heat olive oil. Add onion and garlic; sauté until softened and aromatic.
  3. Season with salt, pepper, and soy sauce, then toss in the cooked noodles until well coated.
  4. Spoon the tofu stir-fry on top, garnish with sesame seeds, serve, and enjoy!

Note: It’s normal if the tofu doesn’t stay crispy in this recipe. Because it’s tossed back into the sauce with vegetables, the glaze naturally softens the tofu’s coating as it absorbs flavor.
